I have to confess, french fries are one of my favorite foods. I can't resist them, whether they are from a fast-food drive-through or a fine restaurant. Luckily, these garlic-laced "fries" satisfy my cravings in a more healthful way. They come out golden brown, tender on the inside and crisp outside. A final toss with chopped parsley gives them that real French bistro feel.

Peach French Toast Bake
Frozen fruit is nutritionally comparable to fresh, and it is perfectly suited for baking and blending. In fact, I prefer to use frozen fruit in a smoothie because it makes it ultracool and frothy. Just be sure to buy it unsweetened. I use frozen peaches in this recipe to make it an easy year-round dish, but feel free to use fresh ripe peaches when they are in season.

Spice-Rubbed Lamb Pops
I was served this modern take on shish kebab at a hot New York restaurant, and I couldn't stop thinking about how fun and delicious they were. In my version, each skewer is adorned with one rectangular slice of spice-dusted lamb steak, making for a seriously luscious lollipop.

Mom's Turkey Meatloaf
This meatloaf puts me square in the comfort zone with all the homey flavors of Mom's recipe. Only this one is healthier, thanks to a couple of simple substitutions. First, it's made with lean ground turkey. Second, instead of bread crumbs, I use a secret ingredient that binds everything together and keeps the meatloaf wonderfully moist: quick-cooking oats, a healthy whole grain that blends in undetected. All that meaty goodness is covered with tomato sauce and crowned with onion rings that turn golden brown, making for a beautiful presentation.
