The original Waldorf Salad was created more than 100 years ago by The Waldorf Hotel's maitre d'hotel, Oscar Tschirky -- a man credited with inspiring many of the hotel's signature dishes (despite the fact that he had no formal training as a chef). Though modern variations include different vegetables, poultry or dried fruit, one factor has remained constant: the salad's thick, creamy dressing. Shane Kelly puts her healthy spin on this salad by using less mayonnaise than the traditional version; and she adds flavor with seasonings such as shallots, tarragon and Dijon mustard.
