Travel Bites

Jennifer Iserloh, the Skinny ChefI often get the travel bug this time of the year. Have you seen that commercial with the family on the road, sun reflecting off the windshield and their dog's head out the window, his lips fluttering in the wind?
Eating well on the road can be a challenge and I'll admit I'm a snob when it comes to good home cooked meals, even if it's just a simple salad. I don't like the taste of many packaged foods and what they contain, but you can make your own travel bites that taste, look, and smell so much better!

The Humble Waffle
Waffles might seem like "unhealthy" or "just for fun" food but when you make them yourself they can be a great way to get more whole grains. Think outside the breakfast box and make extra waffles next time you're scheduled for travel. These portable softies can be sweet or savory, depending on the filling and stored room temperature in a zipper lock bag or wrapped snuggly in plastic wrap. Freshly made waffles can even be better than most store bought whole grain breads because they don't contain preservatives, artificial colorings or things you should limit like high fructose corn syrup.
Filler Up!
When the flight attendant announces that there is no lunch or the greasy breaded chicken sandwich that you can buy for $8, you can whip out your own waffle sandwich filled with ham, low fat Swiss cheese with honey mustard for a lunch that will make your seat mate jealous. Or if its bacon you crave what about a BLT waffle made with savory turkey bacon? For a fast breakfast that anyone taking a red eye would love to wake up to, spread waffles with a tablespoon of low fat cream cheese, top with sliced fresh strawberries and fold. Have a sweet tooth that doesn't stop when you're on the road? Add a few bittersweet chocolate chips to the batter to make a whole grain sweet that is less sugary.
