Grilled Vegetable Recipes

EatingWellSure grilled steaks and barbecued pork are delicious, but at the height of summer sometimes the most delicious thing to grill is fresh seasonal produce. The grilled vegetable recipes in this gallery include broccolini, peppers, eggplant, tomatoes, asparagus, artichokes and more. The dishes make lovely sides for grilled chicken, steak, pork or seafood -- and many of them are robust enough to serve on their own as a main course.
Tip: When grilling vegetables there's almost no such thing as overdone or underdone -- since safety isn't an issue as it can be with meat, let personal taste guide you. Cook the vegetables until they're slightly softened or leave them on the barbecue until they have a nice, crispy char.
