Luscious and Leftovers, 4 Ways with 4 Ingredients

Tossing out food is of course wasteful, but it's also a missed opportunity to have a fast mess-free meal that you can put together in minutes.
When some people think of leftovers, you might be thinking of soggy salad or mushy pasta - but flank steak holds up well until the next day and tastes great cold or even at room temperature. Just remember to slice only what you'll eat for dinner when you initially grill your steak - the cooked left-over meat stores much better if it's not sliced.

Here are four ways to serve your cooked steak, with four simple, additional ingredients:
Steak Sandwich
Grilled peppers
Onions
Grated part-skim mozzarella
Whole wheat hot dog buns
Sauté one chopped pepper and one chopped red or yellow onion with cooking spray until soft. Top you buns with sliced meat, peppers and onions, and sprinkle with cheese.
Beef Lettuce Wraps
Bibb lettuce
Scallions, chopped
Water chestnuts
Jarred teriyaki
Arrange steak onto lettuce leaves. Top with water chestnuts, scallions, and drizzle with teriyaki sauce.
Steak and Eggs
Spinach
Eggs
Steak sauce
Whole wheat baguette
Wilt spinach in a hot skillet. Scramble the eggs and top with spinach and drizzle with steak sauce. Serve with a piece of baguette.
Steak Tacos
Small corn tortilla
Taco sauce
Grated reduced fat cheddar
Chopped romaine lettuce
Fill the tortillas with the steak and top with taco sauce and cheese. Wrap in aluminum foil and warm on the grill or in the oven. Top with romaine and serve immediately.
