I used a similar torch when I was fresh out of culinary school, working as an intern at Veritas restaurant, to burn the sugared tops of their crème brûlée trio, that came out on a monogrammed doily, scattered with fresh lavender buds. It might sound daunting but the torch is the easiest thing in the world to use and you don't have to be a restaurant chef to make this healthy twist on a French classic. Enjoy cracking the golden candy top that scatters like glass under the tip of your spoon.
