In honor of this culinary Christmas mascot, we're offering 25 days of Christmas cookie recipes. December 2nd's cookie of the day? Gingerbread cookies. Come back every day throughout the season for a new cookie, or just some inspiration.

Let's face it, these gingerbread cookies are a holiday classic. The spicy smell alone practically screams "Christmas." The festive little men, women, and children (or anything else you can think of -- animals, cars, trains) get dressed up for the holidays thanks to a simple ornamental icing.
