Cheddar, Ham, and Scallion Cups

My husband has been complaining that he's been in a breakfast rut, tired of eating the same old things – he even went so far as to buy his beloved childhood cereal, Captain Crunch.
My daughter has been apathetic about everything, though she did eat most of Chris's Captain Crunch. So I was searching KitchenDaily for something new to make them -- and just for the record, I don't ordinarily make them breakfast. Maybe it's the holidays, or the fact that work is kind of slow right now, or maybe I just felt like being nice for a change; anyway, I found this recipe for Cheddar, Ham, and Scallion Cups and knew I'd hit the breakfast jackpot. The site describes it as a holiday breakfast dish, but it was such a piece of cake to make, and they liked it so much, I figure I can make it anytime. Like I did this morning. And another thing -- it's awesome that I can stir this up the night and just bake it in the oven the next morning. What a great way to get the morning started.
I had to change a few things -- I didn't have any ham, but I did have some sausage, so I fried that up, crumbled it, and blotted it, and used that instead. (Bacon would have been good, too, but I didn't have that either.) I also had no scallions. Nor did I have whole milk. I never have whole milk. I had 2 percent milk and heavy cream -- so I used a cup of the 2 percent milk and 1/2 cup of cream. And the only reason I had the cream was because I'd used some over the weekend to make a Dark Chocolate Torte with Gingersnap Crust. I'm not sure why, but I was able to make 7 good-sized muffins (I keep thinking of them as egg muffins) and one slightly smaller one. No one complained.
"What's not to like?" said my daughter Michaela, after eating two. "It's got three great things in it: cheese, sausage, eggs, and cream." (I didn't correct her math.)
My husband had his a little later – I was already in my home office. He came flying up the stairs and told me, "These are unbelievable! Oh my God they are incredible! I had two, but I could have kept on going. Only fear of gluttony stopped me!"
Clearly, there was no breakfast rut today. "I love it," he added. "It's like a whole breakfast in a bite!"
