In this video, Lauren shows Jennifer C., a busy mother of two and P.R. professional, how to make her Cornmeal-Crusted Oven Fried Chicken recipe -- a healthy dinner that the whole family (including her husband and three-year-old son) will enjoy. Rather than frying chicken breasts in a pan of oil, Lauren replicates the flavor and texture of regular fried chicken by marinating chicken breasts in low-fat buttermilk, and then coating the breasts in a cornmeal and spice mixture. The chicken cutlets are given a golden, crunchy crust by being baked in the oven with just a little bit of oil painted on with a pastry brush.
