With just a handful of ingredients -- like graham crackers and JELL-O -- Lauren makes summery Key Lime Pie Ice Cream Sandwiches that are lighter than the real thing but just as tasty. The sandwich filling is a key lime mousse comprised of beaten egg whites, sugar, lime jello and heavy cream. Once she's piped this filling in between graham cracker squares, the sandwiches are left to freeze for a few hours -- a process that softens the graham crackers and makes them taste like traditional ice cream sandwich cookie.
