How do you get your boyfriend (daughters, husband, etc) lend a hand to make dinner on a weeknight? It's as simple as suggesting one of their favorite foods.

From the fridge I pulled out the corn tortillas, bell peppers, lettuce, chicken, cheese, and sliced jalapeños. From the cupboard I grabbed a can of refried beans, black beans, and spices.

"Hey, that looks good. Whatcha you making for dinner" asks Neel.

"I was thinking we could have chicken fajitas" I replied sweetly.

"Wait, not tacos? I thought we were going to have tacos this week"

"I mean, you could have a chicken taco instead I guess, but it's pretty much the same thing isn't it?"

Which is true. This is the basic setup for a successful Mexican-style dinner. The same combination of ingredients will work wrapped up in a warm tortilla, stacked in a corn taco shell, sandwiched in between two tortillas for a loaded quesadilla, layered onto tortilla chips and baked for awesome nachos .... you get my point.

I asked Neel to start cutting up the chicken breasts, since I really dislike handling raw meat. He obliged, then said he would actually prefer cutting up the veggies. How could I turn down that offer? I let him do all of the cutting. What a good helper.

So I went about wrapping the tortillas (for me) and shells (for him) and put them in the warmed toaster oven. Once the chicken was cut up and Neel moved on to the veggies, I mixed up the spices and stirred them around in the meat.

At this point we double-teamed the stove, I was manning the hot chicken skillet, and Neel went after the onions and peppers.

This was perfection to say the least. Neel's plate was adorned with taco shells filled to the brim with beans and veggies and chicken, while I preferred to stick to the tortilla wrapping method. Either way you do it, you should make this for dinner.
