But with thousands of varieties of apples that range from sweet to tart and from crisp to mealy, why reserve your picks for only sweet pies, tarts and crumbles? They're wonderful when baked, roasted or sautéed with meats like pork, lamb and chicken. These salads, entrées and sides incorporate a number of different apples as more than just a garnish. Marcus Samuelsson even made apples an integral part of the soup and salad combo he served for the Obamas' first White House State Dinner.
