AlamySo carrot cake is your dessert of choice because it's healthy, right? That's a good one! Carrot cake has never been eaten because it contains a vegetable, it's because it's just so good.
Carrot cake is sacred in our family. It all started when my younger sister, Stephanie declared that this was her favorite dessert. She always requested it for her birthday (which is right near Christmas). So, being the good sister that I am, I used to whip her up one every year, even though our family was doing a ton of other Christmas baking. After we both left home, the tradition faded until I met my husband, Steven, whose birthday is the day before Stephanie's. And of course, what was his birthday cake of choice? Yep, you guessed it, carrot cake. (How did I get so lucky?)
So the tradition has resumed, and I make one cake to celebrate both their birthdays each year. Now my 2 kids are hooked and beg for it, even in cupcake form. When I make this cake for anyone, they always say, "That is the best carrot cake I have ever tasted." So, it seems like I'll be making many more of these delicious carrot cakes in the years to come...
