Easter Bunny Cake

Elizabeth Hait, AOLWant to make a cute bunny cake for Easter? This Easter bunny cake is a snap to put together, and will surely impress your kids and family. We usually make an Easter cake that looks like a bunny's face, but this year we wanted to try something a bit more special. Once the bunny is done hiding eggs and chocolates for the kiddies, he sits waiting for dessert on the dining table.
Make the cake and frosting recipes, then follow the instructions below.

To make the bunny's body you will need to bake a few different shapes. An 8-inch round cake is the main part for the body. Two 1-quart bowl cakes make the head and haunches. And the little bunny tail can be made from either a muffin tin or a small ramekin.

BODY: Cut the 8-inch cake in half, forming 2 semicircles. Spread some frosting between semicircles and sandwich them together, cut sides down on your prepared platter. Trim a 1-inch piece off one end of the cake, discard trimmings.
HEAD: Trim a little of each edge of 1-quart cake to make a head, then spread some frosting to adhere to body (side of body that was trimmed).
TAIL: Spread the muffin cake with some more frosting and attach it to the other end for the tail.
HAUNCHES: Cut the remaining 1-quart cake in half and spread with frosting on their flat sides and attach to body to form haunches.

Spoon some frosting into a pastry bag fitted with a star tip. Start piping stars, in rows, covering any exposed cake. Repeat with remaining frosting.

To make edible ears, start with the 1/4 lb piece of store-bought fondant. Pinch off a 4-inch piece, add 1 drop of food color and knead to make fondant pink; set aside. Form remaining white fondant into two bunny ears. Spear bunny ears carefully with skewers, then dab the middle of the ears with some water, and adhere a little pink fondant piece as the center of the ears. Push into bunny head.

Place to candies, like M&M's, on the head for eyes. Use any remaining pink fondant to make a nose, whiskers and mouth.
