New Media PublishingAdd some kick to weeknight chicken, greens, and rice with ancho and jalapeno peppers.
Chicken with a Kick Menu
Main: Chicken cutlets with ancho orange sauce -- It's no wonder that ancho chiles are the most commonly found dried Mexican chiles in supermarkets these days. They are easy to use, aren't too spicy, and provide a warm, sun-baked flavor as well as substantial body to a sauce. When you buy the chiles, they appear so dark--almost black--that it's hard to believe they'll transform themselves into a gorgeous brick red puree. Side dish: Braised greens with tomatoes.Healthly Benefits
All chili peppers (including anchos and jalapenos) have a substance called capsaicin (responsible for giving peppers their fiery bite). Some studies suggest that capsaicin can help with weight loss by curbing your appetite, increasing metabolism, and preventing the accumulation body fat. Peppers also contain vitamin C, beta carotene, folic acid, magnesium, and potassium and offer antioxidant and anti-inflammatory effects. Serve with brown rice (and lots of water!).Related Articles
