Very Berry Cupcakes For a Good Cause

KitchenDailyWe've got a berry-packed cupcake recipe to celebrate the spirit of giving. To kick off AOL's second annual Monster Help Day, a companywide day of service for employees worldwide, volunteers will be selling these Very Berry Cupcakes to raise money for American Cancer Society.
Tonnie Rozier, founder and CEO of Tonnie's Minis in Harlem, NY, shares with us his limited-edition recipe for these luscious desserts. Fresh crushed strawberries and raspberries are mixed with a creamy vanilla batter and topped with a strawberry icing.

Very Berry Cupcakes

2 cups flour
2 1/2 teaspoons baking powder
1 1/3 cups sugar
3/4 teaspoon salt
1/2 cup butter
1/2 cup Crisco
2/3 cup milk
1 1/2 teaspoons vanilla extract
2 eggs
1/4 cup milk
3/4 cup crushed strawberries
3/4 cup crushed raspberries
Very Berry Icing
3 1/2 cups powdered sugar
1/2 cups butter
1/4 cups crushed strawberries
1/4 cups milk
To make cupcakes: Preheat oven to 350 degrees Fahrenheit. Sift together the flour, baking powder, sugar and salt and set aside.
Cream together the butter, Crisco, 2/3 cup milk and raspberry or vanilla extract.
Mix wet and dry mixtures together until creamy. Add eggs and 1/4 cup milk and mix well.
Pour 1/4 cup batter into each baking cup, and add one teaspoon each of crushed raspberries and strawberries to each cupcake. Blend with a toothpick or straw.
Bake for 10 to 15 minutes and remove from oven when a toothpick inserted in the cupcake comes out clean.
To make Very Berry Icing: Blend room temperature butter until creamy. Mix in powdered sugar 1/2 cup at a time. Add 1/4 cup milk and blend, and then fold 1/4 cup crushed strawberries into the frosting.
