Is it cheating if we hand over this question to an expert in Latin food? Grilling plantains is actually "idiot-proof," according to chef Douglas Rodriguez, the godfather of Nuevo Latino cuisine. Plantains, which are like bananas' starchier cousin, have a "natural, earthy, smoky flavor" when grilled, "a perfect complement to a barbecue dinner." In the video below, Rodriguez and Bobby Flay show you how to grill them to make a traditional Latin dessert. The procedure is super easy because the skin on the plantains will begin to split when they are done, usually in 25 to 30 minutes.
