Ah, honey! That sweet golden nectar. We absolutely love honey for its color, flavor and thick syrupy texture. Just a drizzle of honey on fruit, cheese or crackers is a simple way to enjoy it. Honey works exceptionally well in baked goods, like cakes, quick breads and muffins. Savory recipes, too, benefit from a bit of honey, such as vinaigrettes, marinades and sauces.
If it wasn't for the docile honeybee, we wouldn't have honey. Bees have basically been domesticated to satisfy our sweet craving. For centuries honey has been harvested by humans for food. Many religions even put special emphasis on honey, believing in its symbolism of the promise of paradise. We always turn to honey when we need some comforting relief for sore throats.
To this day, beekeeping is a thriving profession. You will even find beekeepers in the urban landscape (just see the video below). Look for honey in many different flavors and colors (depending on the flowers the bees frequented), from pale gold to dark brown. Visit your farmers' market for the widest availability. And if you're an allergy sufferer, try raw honey, which retains properties that create allergy immunity when eaten regularly. Honey is, after all, very good for us.
