Lemon grass is a bright and flavorful aromatic ingredient in Southeast Asian cooking, but many of us never buy it at the market because we have no idea how to use it. It lends an amazing flavor to soups, broths, marinades and vinaigrettes, but if you just stick a whole stalk of lemon grass into your dish, you won't extract much flavor because most of the aromatics are from the inside of the stalk (not to mention, the stalk is a little long and cumbersome to fit in your saucepan).
