School Lunch Ideas for Kindergarten Through High School

I remember being delighted once summer started and I no longer had to pack the dreaded school lunch for my son. While other kids were having Lunchables, I tried to come up with something similar, but a little more healthy that wouldn't illicit the cry, "But Mom, all the other kids...."

The suggestions for school lunches below take into account the age of the child -- small kids need small, fun lunches, while older kids need more sustenance without a lot of frills. Some of the lunches here have suggestions on what else to add to the lunchbox; other all around good choices include whole grain crackers and pretzels, crisp vegetables, an occasional bag of chips, fruit, homemade trail mix and a cool drink.

Elementary School Lunches

Mini Sliders: Buy mini burger buns and top with sliced meatballs and a little barbecue sauce or ketchup. Pack additional barbecue sauce or ketchup for dipping. Add a bag of baked whole grain chips and pack carrot sticks and a frozen, 100% juice juice box.

Cheese and Tomato Rice Crackers: Spread mini rice crackers with soft (fresh) goat cheese and horizontally halved grape tomatoes. If you can find baby bananas, add them to the lunchbox, or, instead, a couple of mandarin oranges.

Pasta Salad: Cook short tubular pasta the night before and toss with olive oil to coat. Add chunks of cheese, snap peas and a little sweet red bell pepper (or other vegetable your child likes).

Mini Bagels with Hummus: Cut mini bagels in half and spread with a couple of different types of hummus. Send along some string cheese, and whole grain mini pretzels.

Ants on a Log: Fill celery sticks with sunflower seed butter (or peanut butter if allowed) and top with raisins. Serve with a healthy brand of cheese crackers, and a small container of flavored yogurt.

Middle School Lunches

Picnic Lunch: Leftover fried (or healthier oven-fried) chicken makes a great lunch, and if you've got coleslaw too, even better. Wrap the chicken in foil or pack it in a reusable container; put the coleslaw in another small container. Add some cornbread and a chilled tea and you're all set.

Turkey-Cheddar "Wraps": Wrap thinly sliced roast turkey around Cheddar cheese sticks. Serve with a mixture of mustard and finely chopped store-bought mango chutney or apricot jam. Pack whole grain pretzels instead of bread.

Chicken Satay: Thread chunks of cooked chicken onto skewers along with cucumber chunks. Make a dipping sauce of sunflower seed butter (unless peanut butter is allowed), a little honey, cilantro, lime juice and a touch of hot sauce.

Maple BBQ Pork on a Bun: Cook pork tenderloin, brushing it while it cooks with your favorite barbecue sauce doctored with some maple syrup (you can make this for dinner and use the leftovers for lunch). Cool and thinly slice. Place on a bun spread with barbecue sauce, maple syrup and shredded carrots. Pack a bag of sweet potato chips.

Submarine: Make a hoagie with cooked chicken sausage, sauteed peppers and onions. Send along a small container with a little oil and vinegar for drizzling.

Junior High School Lunches

Soft Turkey Tacos: Spread flour tortillas with black beans mashed with hot pepper sauce. Top with corn kernels, diced tomato, thinly sliced turkey and shredded Jack cheese. Roll up.

Veggie Burgers: Cook veggie burgers and top with a spread made of a combo of mayo and chipotle or ancho chile powder; and sliced tomatoes, if desired.

Lentil and Spinach Salad: Cook lentils and toss with chickpeas, feta cheese, grape tomatoes, thinly sliced scallions and fresh spinach.

Chicken Nuggets: Take chicken tenders, dredge them in flour and saute until crisp, golden brown and cooked through. Pack with a few small containers of dipping sauce, such as marinara, barbecue and honey-mustard.

Ham and Cheese Redux: Spread a split baguette with butter and fig or apricot jam. Top with thin slices of ham, a creamy cheese like Brie and thinly sliced apple or pear.

Senior High School Lunches

Sushi Rice Salad: Cook sushi rice or regular rice according to package instructions. While still warm, add a little sugar dissolved in rice or cider vinegar and toss with a fork. Fold in diced red bell pepper, shredded carrots, cooked and shelled edamame and salt; toss to combine.

Spaghetti Frittata: Fold leftover spaghetti into beaten eggs combined with some grated Parmesan cheese. Pour into a square baking pan and bake at 350 until just set. Cut into rectangles and serve on slices of foccacia or other bread.

Fontina, Onion, and Mushroom English Muffins:
Toast English muffins and brush with a cut garlic clove and a little olive oil. Top with sliced fontina cheese, sauteed onions and sauteed sliced mushrooms.

Pork Parmesan Sandwich: Dip pork cutlets first in flour, then eggs, then in a mix of breadcrumbs and grated Parmesan cheese. Saute until golden brown and cooked through. Pack on crusty rolls with greens and a drizzle of lemon juice and olive oil.

Roasted Vegetable and Cheese Salad: Roast (or grill) an assortment of seasonal vegetables and dress with oil and vinegar. In a separate container pack slices of Manchego or Cheddar cheese and a crisp green to be tossed together at lunch time. Send along toasted pumpkin seeds to be sprinkled on top and crisp pita chips.

Quick Miso Ramen Soup with Broccoli and Carrot

Although I've long been a great believer in whole grains and cooking from scratch, and strived to raise my two daughters on wholesome foods, I will admit that I occasionally turned to convenience items such as packages of fast-cooking ramen noodles for quick lunches when the girls were young. I rationalized my choice by tossing out the flavor packet with its list of unpronounceable ingredients and instead using nourishing miso to flavor the soup. When you crave noodle soup but you're really short on time, ramen do come to the rescue.

Now that both of my daughters will be in college (the younger one starts in a couple of weeks) and both will be preparing their own food, I know their cupboards are likely to be stuffed with packages of ramen noodles, the default meal choice for so many students because they are surprisingly inexpensive and cook so quickly. With that realization fueling me, I set out to develop a collection of ramen recipes that not only embellish the noodles with healthful vegetables and interesting flavors, but that even I would be proud to serve at home.

From ancho chiles and lime in a Mexican-inspired soup, to the warmth of fresh ginger in a chicken soup, to a Chinese stir-fry on top of a crispy-fried ramen cake, the following recipes are not only fun to make but show the diversity of what ramen can do in a pinch. If by some chance you need more convincing, just ask my neighbors with whom I shared the many versions I was trying. They loved these ramen incarnations so much, they've been asking me for the recipes.

When President Harry Truman signed the National School Lunch Act into law in 1946, he probably didn't imagine that American schools would one day be serving chicken fingers, frozen French fries and soggy pizza.

While nutrition activists are trying to get healthier foods into our schools, we wondered what school lunch looks like in other countries -- places where ketchup has never been considered a vegetable.

School Lunches Around the World

Finland
The Finnish educational system is often considered one of the best in the world and serving healthy school lunches is a major priority. Government regulations demand that meals are "tasty, colorful and well-balanced." Since the late 1990s, guidelines have specified serving proportions: vegetables, cooked and raw, must cover half the plate (carrot and beet salads are popular), with proteins and starch taking up one-quarter plate each. The majority of the nation's schools offer a vegetarian option every day. The national specialty hernekeitto, a green pea soup often flavored with smoked pork, is usually served on Thursdays in a nod to Finnish tradition.

Australia
Most Aussie kids bring their lunch from home. And most of the time, that lunch is a sandwich of cheese and Vegemite, the jam-like, salty yeast-based spread that's been a staple since 1922. The Vegemite sandwich gets a shout-out in Men At Work's classic antipodean anthem "Down Under."

Italy
The sustainable food crowd loves Italy, and with good reason. The majority of Italian schools serve lunches made from organic ingredients, mostly grown nearby. The daily meal at la mensa della scuola -- the school canteen --is usually centered around pasta or risotto, with salad served as a separate course. Meat shows up on the menu only a couple times a week, and in small portions. But it's not all about nutritionally correct eating for Italian children; merendine, aka snacks, are big parts of most children's days. Bread spread with chocolatey Nutella is a classic between-meal sweet and Italy's kids are almost as addicted to packaged candies and cakes as their American counterparts. Italy actually has a higher proportion of overweight children than the U.S.

Kenya
People who went to school in Kenya usually have strong feelings about githeri; they're either totally nostalgic or extremely sick of it. A mixture of beans and dried corn, the dish is traditionally associated with the Kikuyu tribe, but it has become the standard school lunch throughout the country. Every day, school children line up with their plastic bowls as servings are ladled out from huge pots.

Korea
Most school cafeterias in Korea use sectioned metal trays and there's a standard way of filling them up. The two biggest sections are for rice, usually served with pickled vegetable kimchi and soup. Smaller compartments -- there's usually three of them -- hold side dishes of vegetables and fish. As for the beverage, kids are given little plastic bottles of sweet yogurt drink, hugely popular in Korea.

Barbados
For many kids in Barbados, the best part of school is the morning snack of milk and biscuits -- known as cookies to us Americans -- provided free in all schools since the 1930s. The locally produced Wibisco brand biscuits have nourished generations of children. In 1963, the government began a hot lunch program, with meals, beans and rice, mostly, delivered by van to schools around the island.

Brazil
The school day for most students in Brazil starts at 7 a.m. and runs till noon. To stave off hunger pangs during the morning hours, kids will munch on snacks like queijadinhas, which are muffins made from cheese and coconut. While many children eat lunch at home after school, the Brazilian government has sponsored a nationwide school lunch program since 1955, offering hot, healthy meals to underprivileged students.

France
You don't think the French would serve their children sloppy joes, do you? School lunches are taken just as seriously as meals for adults. In fact, kids are served pretty much the same things adults eat. A week's menu in a restaurant scolaire -- the canteen of a French school -- might include veal scallops Marengo, hake with lemon sauce, and lamb with paprika. Fresh bread and salad are, of course, included at every meal and fruit and yogurt are the usual desserts. The only thing the kids don't get is wine.

Japan
In Japan, school lunch known as kyuushoku is an important part of every child's daily schedule. Meals are eaten in the classroom; after the tables are cleared, the student assigned as that day's lunch monitor serves everyone. Rice and fish make up the bulk of the menu, but some days students are treated to the kind of East-West comfort food that Japanese kids especially love: dishes like korokke, which are fried potato croquettes or omurice, an omelet filled with a ketchupy rice and chicken mixture.
