EatingWellIf you've sworn off carbs or or just trying to cut down a bit on the starchy stuff, it can be hard to find meals that aren't just meat, meat and more meat (and loaded with cholesterol and saturated fat too). To help, we've gathered dinner ideas that are low in carbs but still healthy. They all come from our partners at EatingWell, who define "low carb" as any recipe with fewer than 20 grams of carbohydrate (see EatingWell's nutrition and recipe guidelines).
Almond-Crusted Chicken Fingers: These baked chicken tenders are coated with a mixture of high-protein nuts and just a little flour for a crispy coating that's still low in carbs. Serve with steamed broccoli to round out the meal.
Ham and Cheese Stuffed Chicken Breasts: These recipe stays on the lighter side since just 1/4 cup grated cheese and two tablespoons of chopped ham are used for four servings.
Mustard-Crusted Salmon: A mixture of reduced-fat sour cream, mustard and lemon juice keeps this fish moist and flavorful.
Sichuan-Style Chicken with Peanuts: Garlic, ginger, soy sauce and a little rice wine, plus a spicy and savory Sichuan Sauce add serious flavor to skinless, boneless chicken breasts or thighs.
French Country Beef Stew: Turkey bacon, red wine, orange zest and fresh and dried herbs are used to season this hearty beef stew.
Artichoke and Red Pepper Frittata: This egg dish is both low-carb and vegetarian.
