We know that vegans can't live on salad alone, so we've put together a few of our favorite vegan dinner recipes, below. The recipes are great for "flexitarians" too, so don't shy away if you're normally a meat-eater.
Miso-Glazed Tofu with Pan-Seared Shiitakes and Asparagus: This recipe was inspired by chef Nobu Matsuhisa's cod recipe -- the slightly soft tofu soaks up the marinade beautifully.
Green-Lentil Curry: This Indian vegan recipe is by Madhur Jaffrey, the author of many renowned cookbooks, including World Vegetarian.
Warm Quinoa Salad with Edamame and Tarragon: The superfood quinoa (a grain-like seed that's a great source of protein) is served with edamame (soybeans), another great source of protein.
Rice Noodles with Asian Pesto: Lauren Braun Costello serves rice noodles with a pesto of cilantro, mint, basil, peanuts, garlic, soy sauce and hot sauce. A garnish of coarsely-chopped peanuts adds crunch and protein.
Bean Corn and Squash Stew: This Chilean stew is made with kidney beans, butternut squash, corn and red and green bell peppers.
