Upside-Down Apricot Skillet Cake
If your kids like to hang upside down on the monkey bars, they will appreciate this upside-down cake. We use apricots, but many other fruits, such as peaches, plums, and nectarines, can be substituted. Skillet cakes are fun for kids to make because they are simple and foolproof. Serve topped with scoops of vanilla ice cream.
Kids Can: Halve and pit the apricots, place apricot halves face down in the pan, measure and mix ingredients, help pour the batter over the apricots.
