Once brined, these chops can be pan-fried, broiled or grilled. The main caution here is not to overcook them. Brining (soaking in a salt solution) helps keep the chops firm and juicy.
We use whole-wheat pastry flour to add fiber and lower the saturated fat by replacing some of the butter with canola oil. The sweetened filling in this pie is made with two kinds of apples.
Acorn squash’s natural shape makes it just right for stuffing. This filling has Mediterranean flair: olives, tomato paste, white beans and Parmesan cheese.
