It's hard not to love pizza, and a lot of Americans do. According to the U.S. Department of Agriculture, 1 in 8 Americans are eating it on any given day. (It even stole the show at the Oscars earlier this year.) One of the highlights of the popular food is the fact that you can personalize it to your tastes with your favorite toppings, one of which is more often than not a gooey, warm, irresistible cheese.
Now, researchers at the University of Auckland in New Zealand are determining what the perfect cheese is to top your pizza with. Bryony James, a professor of materials engineering, set out to find out why different cheeses look and taste different when baked atop a pie—and they came to some interesting conclusions.
