How to Make Banana Buttermilk Pancakes

Buttermilk pancakes give the whole family a reason to get out of bed on the weekend. Watch Chef Stuart O'Keeffe prepare classic banana buttermilk pancakes with an indulgent chocolate ganache sauce in the KD101 test kitchen. Don't usually have buttermilk in your refrigerator? Don't worry, this video will teach you how to make a substitute.

Buttermilk Pancakes with Chocolate Ganache Recipe
Serves: 6 to 8
Pancake cook time: 20 minutes
Ganache cook time: 6 minutes

Pancake Ingredients:
3 cups all-purpose flour
3 teaspoons baking powder
1 ½ teaspoons baking soda
1 teaspoon kosher salt
4 tablespoons sugar
3 large eggs, lightly beaten
3 ½ cups buttermilk
1 tablespoon vanilla extract
4 tablespoons unsalted butter, melted
1 banana peeled and sliced thinly

Preparation: Place nonstick skillet over medium heat. Whisk flour, baking powder, baking soda and salt together in a bowl. Add sugar, eggs, buttermilk and melted butter, whisk to combine all ingredients until just combined. Leave lumps! Do not over stir. To test if the pan is hot enough, sprinkle some water on it, if the water bounces, the pan is hot enough. Coat with nonstick spray (optional). Pour about ¼ cup of batter onto the hot pan. Sprinkle banana pieces onto the top of each pancake on the griddle. Lightly tap to ensure each piece submerges in the batter. Pancakes should be flipped when tiny bubbles start to form on top of each cake.

Chocolate Ganache Ingredients:
8 oz. dark (70%) chocolate
½ cup heavy cream
½ cup whole milk
1 tsp. unsalted butter

Preparation: Chop chocolate into small pieces. Combine cream and milk in saucepan and bring to a light simmer. Pour hot liquid over chocolate in a stainless steal bowl. Let sit for 5 minutes Stir in butter until chocolate is a nice and shiny sauce.
