The heart of Southeast Asia during the 4th century BC witnessed the emergence of the earliest type of sushi: salted fish kept in fermented rice for a couple of months before consumption of the fish alone. This method of food preservation traveled to Japan by the 8th century AD, where it developed as a cuisine served with the rice and partly raw fish.
Tokyo became the hub of sushi development as the cuisine's popularity boomed at the beginning of the 19th century. Sushi chefs utilized local vegetable and food products that enhanced its flavor.
