Grilled cheese is one of life's great comfort foods. Warm and stringy, it's best served right off the grill. Watch Chef Stuart O'Keeffe make the ultimate Gruyere grilled cheese sandwich with caramelized onions, bacon and arugula in this video and learn the secrets to perfecting this classic dish.

Gruyere Grilled Cheese
Serves: 2
Cooktime: 20 minutes

Ingredients:
2 tablespoons olive oil
4 pieces rustic sourdough bread sliced
5 oz Gruyere cheese
4 slice thick cut bacon, cooked
½ onion, thinly sliced
1 oz arugula
4 tablespoons red wine vinegar
2 teaspoons sugar butter, softened

Preparation:
Coat a cast iron pan with olive oil on a medium heat. Add onions and salt. Cook onions until they start to caramelize When they turn to a medium brown, add the vinegar and sugar and cook further until the liquid has evaporated. Assemble grilled cheese. Butter bread and top with cheese, onions, bacon and arugula. Heat a skillet. Grill on each side until sides are crispy and cheese has melted.
