Making angel food cake with agave works beautifully.

Preheat oven to 325 degrees. Prepare a metal tube pan.

ift cake flour 3 times into a medium bowl. Add orange rind to flour. In a stand mixer, using the whisk attachment, beat egg whites on high speed. When whites start to froth, add cream of tartar. Beat until the whites form soft peaks. Add agave gradually while the machine is still running, when the whites have grown to soft peaks. Keep beating until the peaks begin to shine. Add vanilla. On low speed, add flour until just blended. Using a rubber spatula, continue folding until flour is incorporated. Pour into pan and bake for 30 minutes or until cake just begins to color and springs back when touched. Immediately turn cake upside down onto plate and allow to cool. This prevents the cake from falling.
