Directions
Combine the arugula, fennel and grapes in a serving bowl.
Make a quick vinaigrette by whisking together the vinegar, oil and salt and pepper (or throw the ingredients into a small jar with a lid, cover and shake).
Pour the vinaigrette over the arugula mixture and toss. Garnish with the cashews and shaved cheese.

I substitute pine nuts in place of the cashews for a more traditional Italian version.
