Directions
Arrange the tomato and artichoke hearts over a bed of arugula. Whisk together the vinegar and pesto drizzle over the salad and serve.

I almost always use prewashed packed versions of baby spinach arugula and mixed baby lettuces. True they cost extra but they really pay off in convenience and nutrition. Thanks to the high-tech bags which control the air exchange they are actually just as nutritious as their unpackaged counterparts. Just make sure you keep the greens refrigerated rewash them before using and abide by the sell-by date on the label.
