This hearty and colorful salad, thanks to bright green asparagus and red quinoa, is great with fish or on its own

Ingredients

red quinoa olive oil lemon juice sliced raw asparagus radish cilantro leaf toasted walnut salt and pepper

Directions

Toss cooked red quinoa with olive oil, lemon juice, sliced raw asparagus and radishes, cilantro leaves, and toasted walnuts; season with salt and pepper.
