Bacon Bruschetta

Tomato-topped bruschetta (toasted crusty bread)gets a flavor and texture boost from crumbled bacon in this recipe by grilling expert Elizabeth Karmel.

Mix all topping ingredients except bacon and basil in a non-reactive metal or glass bowl. If serving within 1 to 2 hours, let stand at room temperature so tomatoes release their juices, or refrigerate, covered, up to 24 hours. If refrigerated, bring to room temperature and set aside.

Meanwhile, brush both sides of bread with oil. Place on the cooking grate and grill 2 to 3 minutes per side, until lightly browned. Beware, bread burns very easily so watch the time and the heat carefully. When bread is still warm, rub vigorously with garlic cloves on both sides-(you can actually serve the bruschetta just like this for the authentic Italian version).

Add the bacon and basil to the tomatoes and top each slice of toasted bread with the tomatoes and some of the sauce. Let the bread absorb the drippings and serve immediately.

My family loves this recipe. I usually put the tomatoes, basil, olive oil, vinegar and salt in the food processor and chop. I don't always use the bacon. Goat cheese is wonderful on top.

Amazing! I didn't follow the portions exactly, and added the garlic (mined) into the tomato mix. Either way, it's full of flavor that will delight your taste buds!

Great recipe. Rather than rubbing the garlic cloves on the bread, I smashed them (releases lots garlic flavor) then warmed the olive oil with garlic in a small saucepan on low for 5 min., then brushed the oil on the bread..easier, more garlic flavor!

The bacon bruschetta sounds tasty. BUT when I read to rub garlic clove VIGOROUSLY over warm bread, I wondered....would not this action mash the bread?

Rubbing vigoursly means back and forth across the bread not pressing down to mash the bread. A fresh piece of garlic will almost melt when rubbed onto warm bread
