Cook bacon in a 4-quart pot, over moderate heat, stirring, until crisp, about 5 minutes. Transfer bacon with a slotted spoon to paper towels to drain. Add onions to pot and cook, stirring, 2 minutes. Add garlic and hot pepper flakes and cook, stirring, 1 minute.

Add collard greens and broth, cook, covered, stirring occasionally, 7 minutes. Add vinegars and cook, uncovered, stirring occasionally, until liquid is reduced to a couple of tablespoons and collards are tender, about 5 minutes more. Season with salt and pepper.
