At little more than $1/lb mussels make a festive economical meal that can be prepared in a snap. If you count on serving 1 lb per person as a main course, served with bread and a salad, or fries (in true Belgian spirit), you can increase the recipe for more people as you wish.

Cook onion and garlic in oil in a 5- to 6-quart heavy pot over medium heat until fragrant and slightly softened, about 3 minutes. Add beer, ¼ teaspoon salt and ¼ teaspoon black pepper and bring to a boil.

Add mussels and cook, covered, over medium-high heat until most of mussels are opened, 6 to 8 minutes. (Discard any mussels which do not open after 8 minutes.) Stir in parsley and serve with crusty bread to sop up sauce.
