Put potatoes in a large saucepan with water to cover. Bring to a boil and simmer 15 to 20 minutes or until fork-tender. Drain in colander.

Return hot potatoes to pan and mash with a handheld mixer or potato masher until smooth. (It’s important to mash the potatoes while they’re hot. If they cool, you’ve got glue.) Gradually beat or mash in remaining ingredients.

Ideas:

• Mix in some Cheddar and sliced scallions.

• Stir in wasabi paste or powder (Japanese horseradish).

Cook 2 or 3 peeled garlic cloves along with the potatoes.
