This definitely sounds good. But I will substitute a red onion and use low sodium V8. Also a 1/4 teas of chili powder and increase the garlic to 1/2 teas.

July 03 2011 at 3:03 AM Report abuse Permalink rate up rate down ReplyI make this often in the summer and add cumin and chipotle pepper flakes for a little kick.I also grill the corn so it has that smokey taste too. The stuff is DELICIOUS!!!

July 03 2011 at 1:51 AM Report abuse Permalink rate up rate down ReplyLet me tell you girls, after having some last week my sister had made, it is DELICIOUS!!! If you are having several guests you might want to think about doubling it!
**The only thing sister does differant is she leaves out the V8 & the vegetable oil, instead she use's OLIVE OIL, FRESH parsley & tosses it over until the beans are covered, put it in the fridge the night before so the flavors will blend. ENJOY!!
mdennish...ooohh, I like the sounds of adding some heat! Will experiment more next time around. Thanks for the idea! :)
