Blueberry and Lemon Zest Whole-Wheat Pancakes

Directions
In a large bowl, combine whole-wheat flour, all-purpose flour, sugar, salt, baking powder, baking soda and cinnamon. Add buttermilk, eggs, melted butter and zest; stir together until just combined (a little lumpy is ok; do not overmix).
Heat griddle over medium heat; brush with butter. In batches, drop batter in 1/3 cupfuls onto skillet; arrange blueberries on pancakes (about 25 per pancake), pressing berries gently into pancakes. Cook pancakes until underside is deep golden, about 3 minutes, then flip, reduce heat to low and cook 2 minutes more. Serve warm with butter and syrup.

These pancakes are amazing! They have great flavor and don't need anything else. The kids really loved them. My niece does not like pancakes and loved them!!

Replace the white flour with whole wheat, get rid of salt and sugar, add 1/2 tablespoon of olive or canola oil instead of butter, throw in some walnuts, then you can eat it without regrets.

The baking powder helps pancakes rise. Buttermilk is awesome. I use all of these in my blueberry pancakes, but add honey (1/4 cup +).

Just don't press the cakes after you flip them -- it breaks the berries and wets everything. Monitor them carefully in cooking, as they can burn. Delicious! And healthy, too

I use fresh blueberries, and after pushing them into the batter and waiting until it's time to flip, I don't press down with my spatula after turning, because the fresh blueberries will burst. Enjoy!
