Boston Baked Beans

Beans are normally cooked in a slow oven for many hours but you’ll find that this fast method has all the familiar flavors and rich taste of the original. Navy beans are small white beans that can be found in bags in the supermarket. You can substitute Great Northern beans or cranberry beans if you like, but you may have to increase the final cooking time by a minute or two.

In a 6 to 8-quart pressure cooker combine beans and 4 cups of water. Place cooker over high heat. Once the pressure is up to high and the valve begins to rattle, reduce heat to medium-low (pressure will still be up, but not as high). Cook 3 minutes. Remove from heat. Allow pressure to come down on its own and once it has, remove lid.

Drain. Return beans to pan along with onion, bacon, ketchup, sugar, molasses, mustard, oil, salt, pepper, and 1 cup of water. Place cooker over high heat. Once the pressure is up to high and the valve begins to rattle, reduce heat to medium-low (pressure will still be up, but not as high). Cook 23 minutes. Remove from heat. Allow pressure to come down on its own and once it has, remove lid. Serve.

Sounds like the old fashioned baked beans that my mother used to make except she didn't use a pressure cooker. She soaked her beans overnight, then cooked them on stove top next day. Sometimes she would use a little molasses in her baked beans.
