Broccoli and Cheesy Cheddar Pie

A good quality, store bought crust makes a great base for this savory tart. And don't turn your nose up at frozen vegetables, they're a healthy alternative to fresh and a real time saver. Here, broccoli's surrounded by a cheesy custard. Serve with a simple green salad.

Place a foil lined baking sheet in the middle of the oven and preheat to 375F.

Drain broccoli in a colander and pat very dry.

Mince and mash garlic to a paste with a pinch of salt.

Whisk together garlic paste, eggs, milk, nutmeg, and 1/4 teaspoon salt.

Pour filling into pie shell and add broccoli, then sprinkle with cheese. Bake until custard is just set, 45 to 50 minutes. Cool on a rack 15 minutes. Serve warm or at room temperature.

Good. As a personal chef, my only change is an EASY CHEDDAR CHEESE CRUST: I use 2 store bought refrigerated crusts for the bottom crust. On a floured surface, unroll 1 crust. Dampen top of crust with a little water and a brush. Sprinkle the damp crust evenly with 8 ounces finely shredded cheddar cheese. Top with 2nd crust. Using a rolling pin, roll the 2 crusts together, creating 1 larger crust by about 2 inches. Fold crust in half and gently lay inside a floured pie dish. Unfold and form crust to dish. Roll up excess crust to form a "rope" along the edge of the pie dish. Crimp with fingers. Add filling and bake per recipe directions. GREAT, easy crust for any quiche or even apple pie!
