To make the dressing, whisk the egg yolks together, and while whisking continuously, drizzle in the oil. When the dressing gets thick, thin it by whisking in the juice of half a lemon. Continue slowly incorporating the rest of the oil, adding the juice of the other half a lemon to thin it. Once all the oil has been incorporated, if the dressing is still too thick, thin it with a little warm water.

Smash the garlic with the flat side of a knife and then mince it with a little salt, forming a paste. Mince the anchovies, forming a paste. Season the dressing with pepper, then add the garlic and anchovy pastes to taste. Adjust the seasoning with additional lemon juice, Parmigiano, salt and pepper.

To finish the salad, mix about 1/3 of the dressing with the lettuce and about half of the croutons. Add more dressing to taste (any unused dressing can be refrigerated for up to 3 days). Serve the salad garnished with the remaining croutons, additional grated cheese and a few Parmigiano shavings.

I don't like using uncooked eggs. I would not make this salad as is.

As a personal chef, I often substitute the 2 egg yolks with 2 Tablespoons Hellman's Real Mayonnaise, because the raw egg yolks are not pasteurized. With this substitution, you can keep this caesar dressing in a tightly sealed bottle, refrigerated for weeks. Also, try adding a pinch of cayenne pepper. Makes any caesar dressing even better!

Genius, but pieces are too big & dressing is always on the side. Needs tomatoes & mushrooms. Croutons only go on top or they get soggy. I've made many of these for celebs, Hiliary Clinton, etc....Alfred-

Tomatoes and mushrooms sound great but then it's not a traditional Caesar Salad. You could also use anchovy paste instead of the whole anchovies.

DISGUSTING! He sticks his fingers in the dressing, then in his MOUTH ... then continues handling the food WITHOUT WASHING HIS HANDS! I don't care how good the recipe may be. His lack of hygiene makes me sick ... could make those who *********** too!
