Although these doughnuts are a favorite during the Festival of Lights, many cooks make them year-round, as an alternative to yeast-leavened doughnuts.

In a medium-size bowl, whisk egg, egg yolks, sugar, butter, oil, milk and vanilla until smooth.

Stir flour, baking powder and salt in a large bowl to mix. Stir in egg mixture until blended.

Pour oil to a depth of 3 inches into a 3- to 31/2-quart saucepan. (If using an electric deep-fat fryer, follow manufacturer’s instructions.) Heat until oil registers 350°F to 360°F on a deep-fat frying thermometer, or until oil bubbles gently around a small amount of batter.

Carefully drop up to 5 tablespoons batter, one at a time, into the hot oil. Fry 1 minute or until doughnuts float to surface. Turn doughnuts over and fry 1 minute longer until golden brown.

Remove with slotted metal spoon to paper towels to drain. Repeat with remaining batter, keeping oil temperature between 350°F and 360°F.

Mix Coating ingredients in a shallow bowl. Add doughnuts, a few at a time, and roll to coat.
