Ingredients

Serves:

    • 2 pounds cherries, preferably sour
    • 1 cup port wine
    • 1 sprig fresh thyme (optional for savory), or 1/4 teaspoon ground cinnamon (optional for sweet)
    • sugar to taste
    • salt and freshly ground black pepper (for savory)
    • 1 tablespoon freshly squeezed lemon juice if using sweet cherries, or to taste
    • 1 teaspoon minced lemon zest (optional for sweet)

Directions

Pit the cherries and combine them with the port and thyme if you’re using it in a medium saucepan over medium-high heat. Cook, stirring occasionally, until the cherries are very tender, about 20 minutes.

Fish out the thyme and sprinkle with salt and pepper for savory cherries; taste and add the cinnamon and sugar if needed for sweet cherries. Taste and adjust the seasoning, adding the lemon juice and zest if you like. Serve the cherries warm, at room temperature, or cold.
