Whether its family or friends, or both, everyone will enjoy putting together their own fajita plate with the assortment of ingredients you offer. Keeping cans of beans, pickled jalapenos, and cheese on hand makes for a short shopping list

Preheat an oven to 350°F.

Wrap the tortillas in aluminum foil and place in the oven to heat for 10 to 15 minutes. In a bowl toss together the chicken, salt, paprika, pepper and cumin. Add 2 teaspoons of the canola oil.

In a frying pan over medium high heat, add the remaining canola oil. When it is hot, add the chicken and sauté until just opaque, about 4 minutes. Set aside and keep warm. In the same pan, sauté the peppers and onions, stirring often, until the onions are limp and translucent, about 7 minutes. Remove and set aside.

To serve, arrange all the ingredients in bowls or on platters, along with the warm tortillas and let everyone serve themselves.
