This is probably one of the quickest fish dishes you’ll ever make--smokey heat from chipotle hot sauce melds with creamy mayonnaise giving tilapia a bubbling topping that will satisfy everyone around the table.

Preheat broiler. Line rack of a broiler pan with foil, then lightly oil.

Whisk together mayonnaise, scallion greens, and Tabasco. Pat fish dry, then put on foil and lightly season with salt. Spread fish evenly with topping and broil about 8 inches from heat until topping is bubbling and golden and fish is just cooked through, 6 to 8 minutes. Serve with lemon wedges.

Fast, easy, and very delicious. What's great about this recipe is that all the ingredients are already in your pantry.

This is a quick and easy recipe but I won't make it again. After cooking it an extra 5 minutes, the fish wasn't done in the thickest parts and was overdone around the edges. The flavor was so-so.
