Chippy Green Beans

+ VOTE NOWCream of mushroom soup and crushed canned onion rings aren't the only way to make green bean casserole, you know. This recipe tastes much fresher and much less Thanksgiving-dinner-in-the-1950s than the familiar one we all grew up with.

Preheat the oven to 350°F. Grease a 2-quart casserole dish.
Cook the green beans in boiling water for 2 minutes, then drain. (They should still be very crunchy.
In a large skillet, heat the butter or oil. Sauté the onion for eight to ten minutes, or until it just begins to brown. Add the beans and toss to coat them with the butter-onion mixture; then remove the skillet from the heat.
In a small bowl, mix the sour cream with the flour, paprika, salt, and pepper until smooth. Stir the sour cream mixture into the beans until everything is well combined.
Transfer the bean mixture to the baking dish. Sprinkle the cheese evenly over the top. Sprinkle the crushed potato chips over the cheese.
Bake the beans for 25 minutes, until they're heated through and the chips have browned.
