Chippy Green Beans

Cream of mushroom soup and crushed canned onion rings aren't the only way to make green bean casserole, you know. This recipe tastes much fresher and much less Thanksgiving-dinner-in-the-1950s than the familiar one we all grew up with.

Preheat the oven to 350°F. Grease a 2-quart casserole dish.

Cook the green beans in boiling water for 2 minutes, then drain. (They should still be very crunchy.

In a large skillet, heat the butter or oil. Sauté the onion for eight to ten minutes, or until it just begins to brown. Add the beans and toss to coat them with the butter-onion mixture; then remove the skillet from the heat.

In a small bowl, mix the sour cream with the flour, paprika, salt, and pepper until smooth. Stir the sour cream mixture into the beans until everything is well combined.

Transfer the bean mixture to the baking dish. Sprinkle the cheese evenly over the top. Sprinkle the crushed potato chips over the cheese.

Bake the beans for 25 minutes, until they're heated through and the chips have browned.

How many carbs???? Diabetics watch their carbs and the chips definitely don't make this a low calorie or low carb dish!

Lots of extra calories here. Try using whole grain chips or for color a cran/raisin combo. The sweet is a nice counterpoint to the salt.

Very good, it does take the place of the onion covered, I like crushed taco chips on these too along with the sour cream

these all seem good but with the exception of a few they are all a way to make string beans taste good by adding calories!! How come I don't like them stemed with lemon juice alone??
