Chive Mashed Potatoes

+ VOTE NOWYukon Gold potatoes are perfect for mashed potatoes, because of their smooth, creamy flesh. Tangy sour cream, chives, and a liberal dose of butter make these a sure-fire favorite at the table.

Peel and quarter potatoes. Cover potatoes with cold water by 1-inch in a 5 quart heavy pot and bring to a boil. Add salt and simmer potatoes, uncovered, until very tender, about 20 minutes.
Reserve 1 cup of the potato cooking water, then drain potatoes in a colander. Return potatoes to pot with 1/2 cup reserved cooking water, milk, sour cream, butter and chives and mash with a potato masher until almost smooth, adding more of the reserved cooking water if necessary. Season with salt and pepper and serve.
