Heat oven to 350°F. Coat 12 regular-size muffin cups with nonstick cooking spray or line with paper or foil liners.

Beat eggs and sugar in a large bowl with an electric mixer about 1 minute until well blended. Beat in chocolate, oil, vanilla and baking soda. Stir in flour and cocoa, then shredded vegetables. Spoon into prepared cups.

Bake 30 minutes or until a pick inserted in centers comes out clean. Cool completely in pan on wire rack. Turn out and decorate.
