Let the cream come to room temperature pour it into a clean pint jar and cap tightly. Shake the jar briskly taking care to stand clear hard-edged objects. The cream will first come to a whipped-cream consistency then the butter solids will begin to form. Once they have come together in a lump pour off the excess liquid -- that is buttermilk -- and either discard or for another purpose. Recap the jar and continue to shake pouring off the liquid as needed. The entire process will take 20-30 minutes.

After it has been thoroughly drained pour in just enough cold water to cover the butter recap shake and drain. Repeat the process until the water that comes out is clear. Scoop the butter into a bowl and stir in a pinch of kosher salt.

Meanwhile spread Pita Chips on a cookie sheet and toast for 5 minutes in a 300F oven. Pour the warmed chips into a bowl and dip into the freshly made butter. All that shaking works up an appetite.
