Shred the cheeses in a food processor with the shredding tool attached. To the cheese add 1 tablespoon of flour and stir.

Rub the inside of a fondue pot with a crushed garlic clove. Pour in white wine, kirsch and lemon juice.

Heat over a medium heat flame until the wine is hot but not boiling.

Add handfuls of cheese, stirring constantly with a wooden spoon until cheese is melted and the cheese-wine mixture has the appearance of a light creamy sauce.

Add nutmeg and white pepper to taste.

Remove the pot and place on a fondue stand surrounded by bread and vegetables.

You left out the WINE from the ingredients list!! It should be more like 2 cups of wine and a splash of Kirsch....And the wine should NOT be dry, try a Riesling.

A small amount of creamy Vacherin cheese makes all the difference. I'm a Swiss native, and believe me I know my Fondue

of course dry white wine, best is Fendant (from the Valais area of CH)

and use good wine.

There is a mistake in this recipe. You do not want 1 cup of kirsch in fondue and you have left out the amount of white wine. Believe it should be 1 cup of white wine and a couple of tablespoons of kirsch.
